The glass is filled with the gorgeous and fragrant aroma of blueberry, elderberry, menthol, and cherry. On the palate, the flavor of juicy, rich, ripe fruit is apparent. The finish is spicy and full-bodied.

Tasting Notes
This wine is deep in color and dense. The attack is silky, with a creamy mouthfeel reminiscent of blackberry and strawberry jam. The tannins are powerful yet well-integrated, perfectly polished and refined by aging and bottle aging. It has a rounded structure and a long, clear, and straightforward finish. It has the potential for further aging in the bottle, and is expected to age for at least three years.

Technical Data

Cultivation
A vineyard with a terroir unique to the Roussillon region.
The well-ventilated, calcareous and stony soil is rich in iron oxides.

brewing
Each variety is vinified separately. Cold pre-fermentation maceration and delestage (recirculation) are carried out daily. Gentle extraction is achieved with 15-21 days of maceration. After pressing with a pneumatic press, the lees are quickly and completely reintegrated. Malolactic fermentation is carried out early, and 10% of the total wine is aged in barrels, adding complexity to the aromas.
