This rare cuvée, made from 100% Semillon, radiates a golden glow. Rich aromas of beeswax, apricot, and vanilla emerge, followed by a rich, savory flavor and exceptional concentration. A subtle hint of oxidation adds complexity, resulting in a classic white wine with a long, lingering finish. Its aging process is impressive, making it a wine that can be enjoyed now or aged for years to come. It pairs exceptionally well with cheese, morels, and seafood dishes.

Tasting Notes
Liquid gold in color. The complex aroma reveals unexpected nuances of beeswax, saffron, homemade apricot jam, and bourbon vanilla. The palate is rich and powerful, with well-defined tannins and a touch of controlled oxidation, resulting in a long, continuous finish. After an hour of airing, the aroma evolves into rose and peony. A classic white wine, it maintains a surprising freshness amid its richness and power.

Technical Data

Cultivation

Grown in a Mediterranean climate on a 50-acre plot, the vines were cleft-grafted onto 15-year-old rootstock in 2006 with our own Massal Selection Semillon grapes. The vines are trained in the Cordon de Royale method.

brewing

The grapes are harvested when fully ripe. They are hand-picked at dawn and then transported in small crates in refrigerated trucks. They are soft-pressed whole clusters using an air compressor for five hours. After clarification at low temperatures, the grapes are gravity-transferred into new 500L demi-muid barrels. Fermentation takes place over a long period of approximately six weeks using natural yeasts. Bâtonnage is performed once a month. Aging takes place on the lees for 12 months. After malolactic fermentation is complete, the grapes are left to rest in stainless steel tanks for six months before bottling. The grapes are lightly filtered and bottled with minimal SO₂ additions. Aging takes place in the bottle for a further 24 months or more.
