Bright and transparent ruby color.

The aroma that rises from the glass is a harmonious blend of gorgeous aromas of red fruits such as cherries and raspberries, spices of cinnamon and cloves, and a subtle toasty aroma.

The mouthfeel is smooth, with a pleasant resonance between the firm fruitiness and delicate acidity.

The tannins are finely textured, and the aftertaste is earthy and mineral, leaving an elegant and sophisticated impression. A highly refined flavor with depth.

Cultivation

Location of the vineyard: "Le Chapitre" plot (1.4ha) located in the heart of the village of Mercurey

Cultivation method: Organic farming, planting density 14,000-20,000 vines/ha (typical domaines have around 10,000 vines/ha)

Yield: Very low yield of 20-30hl/ha, producing concentrated fruit.

brewing

Harvesting: entirely by hand, in small 6kg cases

Fermentation: Whole bunch fermentation, fermented with natural yeast

Aging: 13 months in French oak barrels (25% new), followed by 5 months in stainless steel tanks

SO2 addition: Only a very small amount is added before bottling, with total SO2 below 20mg/L
