On military maps from 1820 to 1866, the plot is labeled "Le Cortale des Baillettes." Cortale means "sheepfold," and Baillettes is the name of the grandmother who purchased the land. The label is made from recycled old barrels.

The plot is at an elevation of 278m, and when you consider that the highest elevation in the area is 300m, you get an idea of how high up it is.

Tasting Notes
Very deep in color. Dense and highly complex aromas of black fruits and garrigue. Full-bodied, rich and concentrated on the palate, yet balanced by surprisingly fresh and delicate acidity.

The grapes are hand-picked in wooden boxes and sorted in the cellar.
It is naturally fermented using wild yeast, and during alcoholic fermentation it is punched down once a day for gentle extraction.
Maceration is 25-35 days. Fermentation is temperature-controlled. Yields are extremely low at 12-17 hL per hectare. Aged for 18 months in French oak.
