Grown in soil containing clay and flint, the Aligote grapes are naturally fermented with wild yeast and aged for nine months on the lees. This allows for a harmonious blend of rich fruit flavors of white peach and pear with the minerality of the flint. The wine has a smooth mouthfeel and creamy texture, and is characterized by a taste that combines freshness and complexity.

Tasting Notes
Pale golden in appearance, when poured into a glass, aromas of ripe white peach, pear, and a hint of apricot rise up, with hints of flint and white flowers spreading in the background.
When you put it in your mouth, along with the rich fruitiness, the fine acidity tightens the whole, and the minerality from the limestone and silex gives it structure.

It has a smooth mouthfeel and a slightly creamy texture from aging on the lees, leading to a long, fresh and pure finish.

A wine that combines depth and refinement, going beyond the boundaries of traditional Aligote.

Technical Data

Cultivation
Aligoté from five different plots on a 5 hectare vineyard.
The vines are 25 years old and are planted on soils containing clay and silex. The vineyard is currently being converted to organic and is due to be certified in 2024.

brewing
Once harvested, the grapes are fed by gravity directly into a pneumatic press.
Fermentation is done with wild yeasts, aging is done on the lees for 9 months in stainless steel tanks with minimal intervention, lightly filtered before bottling, and a small amount of sulfite is added to maintain the stability and freshness of the wine.
