A playful, limited cuvée crafted by the brilliant Hervé Bizeul of Roussillon. Grenache and Syrah, grown on black schist, are fermented for a short period with minimal extraction. It boasts a transparent garnet color with delicate aromas of redcurrant, wild strawberry, and dried rose. The light and pure palate, reminiscent of Pinot Noir, truly shines when slightly chilled. This is a new, "easy-drinking" style from Southern France, perfect with charcuterie or for a summer meal.

Tasting Notes
With its exceptionally clear and translucent color, it almost always evokes Pinot Noir in a blind tasting. The powerful and refined aroma is complex yet prominent in fresh fruit, with nuances of withered rose, cassis, and earthy aromas. The palate is smooth and pure, with extremely delicate tannins. The finish is thirst-quenching and refreshing, with a refreshing, fruit-forward flavor that is so rare these days that it can surprise and sometimes bewilder. Always serve it chilled, at the ideal temperature for white wine or rosé, to maximize its potential.

Technical Data

Cultivation

The Grenache and Syrah come from young vines planted in the black shale soils of the Marne in the village of Espira de l'Agly, while the Cinsault comes from 35-year-old vines planted in clay-limestone, very stony soils.

brewing

The harvest begins at the beginning of phenolic maturity, keeping the alcohol content moderate while preserving the acidity essential for the balance of the future wine. Maceration is short, and the wine is left on the lees for six months before clarification.
