The Burgundy domaines that are most difficult to obtain on the market are said to be Jean-Yves Bizot and Arnaud Ente, and Bizot's wines were reportedly sold at auction last year for astonishingly high prices.

This bottle is the result of a ten-year promise between Jean-Yves Bizot, the cult figure behind Vosne-Romanée natural winemaking, and Hervé Bizeul, a leading winemaker and journalist from the South of France, finally becoming a reality.

It caused quite a stir when it was released around the world. With only a very limited production, it is already being sold at an exceptionally low price, and it goes without saying that it will become a "phantom" wine. Even now, its value in the market continues to soar.

This cuvée is a Pinot Noir from veils vignes planted at the Clos des Fées estate in Roussillon.

To avoid excessive exposure to sunlight, the vineyard is grown on clay-limestone soil, or more precisely, red clay soil, located on a north-facing slope.

It has a wonderful flavor and a clear texture. It has the exceptionally fine tannins typical of Pinot, a refined and sensual mouthfeel, and a long, sculpted finish. It is a great wine, very pure, fresh and taut.

This cuvée, with its exceptional aromatic purity, is a tribute to Paul Claudel's haiku poem, "The Hundred Fans," and is characterised by its exquisite flavours and pure texture.

Hervé Bizel already knew that Jean-Yves Bizot was "one of the 10 cult producers of Burgundy", famous for his non-interventionism, especially in the winemaking process.

"When Jean-Yves Bizot and I, Hervé Bizeul, began to communicate in March 2013, we never imagined that one day we would be working together to create a Pinot Noir cuvée in Vingrau, near Rivesaltes in Luchon."


Jean-Yves Bizot and Hervé Bizzle had been friends for a long time through Hervé's blog, but in 2018, a friend of Hervé's let him try Jean-Yves Bizot's 2015 vintage wine, and Hervé was overwhelmed by its charm.

In 2020, the dream became a reality: the project began when Hervé asked Jean-Yves Bizot to participate in the harvest of a plot of Pinot Noir and to practice his non-interventionist winemaking method.


The minimalist process involves no destemming, whole-cluster fermentation, and no temperature control starting from the grapes.

No sulfur is used, and the wine is quickly decuavaged and entonaged (transferred from tank to new barrel), followed by 12 months of ageing in new barrels. That's it. It's a big risk for the producer, but the rest is just a matter of following the laws of nature.

"This cuvée is not planted in Burgundy, but in the Clos des Fées in Roussillon.
This Pinot Noir is from the Veilles Vignes region. It is best to avoid exposure to too much sun.
The wine is grown on a deliberately north-facing slope, on red clay soil. The aroma is rich and full of flavour, with a hint of spice, and the perfect balance of all the great Pinot Noirs. The nuances of green pepper develop over time.
The freshness of menthol is also added. A very pure aroma spreads, and the taste is juicy and clear.
The rich flavor is beautifully enveloped by the acidity. This is a charming and powerful wine. The tannins suggest that it comes from the south of France, but overall it is refined and elegant. The bitterness in the finish is also very beautiful.
