As a result of the severe harvest reduction in the 2021 vintage, the barrels were in danger of being left empty. Since each barrel is intended to last for more than 10 years, maintaining their integrity was crucial. So Emmanuel purchased a vineyard in the Languedoc (which will be certified organic), had a partner produce the wine, and shipped it to Burgundy for aging and bottling at Domaine Guyot-Ble. This is the Chardonnay.

By aging it with the lees of the 2020 Domaine's wine, Emmanuel was able to control the yeast, giving it the Guyot Bleu style. The wooden barrels used were made by craftsmen at Mercurey.
