Les Sorcières means "the witches." A beautifully clear wine with a clear color and a hint of green sparkling. The floral aroma and the scent of lemon, grapefruit, and ripe white peach spread softly. The mouthfeel is refreshing, with a perfect balance of lemony acidity and rich fruit sweetness. The clean finish leaves a subtle saltiness and a warm lingering hint of apple, making this a white wine perfect to enjoy chilled with seafood dishes.

Tasting notes
Complex and impressive aromas of white flowers, white peach, lemon and grapefruit.
It has a lively, fresh and light taste with a citrus fruity flavour and an impression of iodine and baked apple on the finish. A wine that exudes ripe freshness.

Grilled sardines, fish terrine, sea bass with fennel

Production

Cultivation
Rolle and Roussanne were planted in 2011 on calcareous clay soils.
The macabe trees in Le Bac were planted in 1945 and are grown with standard spacing (1.65m x 1.65m).

brewing
The harvest was carried out to obtain maximum fruit flavour and moderate alcohol content.
The grapes are hand-picked in the morning and transported in refrigerated trucks. To prevent oxidation and preserve the fruit flavor, whole bunches are directly pressed at low temperature and pressure (5 hours).

The wine is fermented in tanks at low temperatures using indigenous yeasts, and then aged on fine lees.
Bottled in February.
