The vines are over 70 years old and are grown on limestone soil mixed with clay and silex stones in the Le Grand Poirier plot. They are macerated on the skins for 4 weeks, fermented with indigenous yeast, and aged in stainless steel tanks. The aromas of pear, citrus, and red fruits are fragrant. They are accented with mellow bitterness and firm tannins. The complex flavor increases when exposed to air, and there are also subtle hints of new leather and graphite. The finish is elegant, well-balanced, and beautiful.

Le Rocher des Violettes

Xavier Weisskopf studied winemaking in Chablis and Beaune, and after obtaining a degree in œnologie and viticulture, he worked for four years as cellar master at Château de Saint-Cosme in Gigondas. After four years as cellar master at Château de Saint-Cosme in Gigondas, he bought his first plot of 7ha and founded Le Rocher des Violettes in 2005.
