The 2007 Côte de Beaune white is a classic vintage, characterized by "remarkably vibrant acidity" and "purity and minerality that strongly reflect the terroir" after a cool and humid summer. Michel Bouzereau's "Les Charmes Dessus" typically features buttery and hazelnut notes, a flinty mineral aroma, delicate and elegant fruit flavors, crisp acidity, and a long finish. Technical Data

The fields, though not certified, employ an organic approach. Tillage was introduced in 2002 to aerate the soil, and herbicides were eliminated by 2005.

Short pruning and strict bud thinning are practiced, with careful observation of growth conditions and microclimates for each plot.

Harvesting is done by hand, taking up to two weeks to ensure optimal ripeness for each plot.

For white wines, grapes are pressed and barreled the day after harvest. Fermentation takes place in a cool cellar with natural yeasts, followed by malolactic fermentation.

Aging occurs on the lees in barrels (or tanks) until the next vintage.

There is no fixed recipe; winemaking emphasizes elegance and purity, adapting to the unique characteristics of each year.
