Tasting notes
A deep ruby red, the aroma features rich black fruits such as blackberry and cassis, with spices and a hint of minerality reminiscent of pencil lead.
On the palate, the rich fruitiness and firm acidity are in harmony, and the smooth tannins linger on the finish.
The subtle vanilla and roasted aromas from barrel aging tighten the overall flavor, resulting in an elegant and balanced finish.

Production

Cultivation
Vineyard: A blend of grapes from plots in the north of the appellation.
Terroir: Granite and sand

Winemaking
The grapes are hand-harvested, completely destemmed, and uncrushed. Fermentation lasts approximately three weeks in stainless steel tanks with frequent short pump-overs. Malolactic fermentation takes place in barrel.
Aging: 12 months in 225L and 500L barrels (10% of which are new)

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
