This white wine is made from 100% Viognier, grown on the highlands of the northern Rhône. Production

Cultivation
Vineyards: This Viognier is a blend of four plots located on elevated land overlooking the northern Rhône Valley. At an altitude of 300m, the plots receive less sun than the vineyards of neighboring appellations (Condrieu and Saint-Joseph), allowing the wine to retain maximum freshness.
Terroir: Granite, sandy, shallow soil.

Winemaking
All plots are hand-harvested and each plot is vinified individually.
After pressing, the juice is thoroughly racked.
Alcoholic fermentation proceeds slowly at low temperatures, and malolactic fermentation is complete.
Aging: Aged for 10 months on lees in 225L and 400L old barrels.

Domaine Julien Pilon

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
