Aroma: A gentle aroma of red berries with a hint of citrus.

Production

- The harvested grapes are vinified in separate plots

- Alcoholic fermentation at low temperature (Pinot Noir)

- Yeast: Saccharomyces cerevisiae (commonly used as budding yeast and baker's yeast)

- 100% malolactic fermentation

- Natural clarification, not artificial.

- Very low sulfite content (approximately 1/3 of the permitted level)

- No barrel aging

- Aging: On the lees for more than 5 years

- Dosage: 7.5g/L
