Low temperature alcohol fermentation
Yeast: Saccharomyces cerevisiae
100% malolactic fermentation
Clarification without collage
Uses very small amounts of sulfites (antioxidants) (approximately 1/3 of the permitted amount)
Half of the blend is made from reserve wines, 2% of which is aged in barrels for 9 months.
Aged on the lees: 6 years or more
Dosage: 6g/L or less
