Tasting Notes
Its pale lemon yellow appearance is complemented by delicate aromas of white flowers, pears, and green apples.
Over time, a mineral aroma reminiscent of flint and wet stone emerges.
In the mouth, the sharp and elegant minerality from the Saint-Andéran silex provides the structure, while the rich texture and thickness of the Boisfleury limestone adds depth to the flavor.
The finish is dry and tense, yet leaves a pleasant, lingering aftertaste that combines fruitiness and minerality.

Cultivation

Plot: A blend of terroirs from the villages of Boisfleury (91.30 ares) and Saint Andelain (98.09 ares).
Soils: Dense limestone in the Boisfleury plot, silex (flint) soil on the Saint-Andéran hills.
Planting density: 6,500 trees per hectare
Age: 35-55 years

brewing

・Soft and long-lasting pneumatic press
The juice is handled carefully (by gravity or a slow, gentle pump) to avoid disturbing the sediment.
- Strict fining (clarification)

Fermented in concrete and stainless steel tanks, aged on the lees
・Clarification is carried out, but no filtration is performed
- Aged in concrete tanks for approximately one year
