Production

Harvested in early October. The grapes are 100% destemmed, and a very slow air-pressure pressing is used to preserve the qualities of the terroir. Initially, a very long alcoholic fermentation is carried out at around 25°C. This is followed by malolactic fermentation and aging on fine lees. Both fermentation and aging are conducted in high-quality oak barrels.
