Production

Harvested in early October. 100% destemming, very slow pneumatic pressing, and a very long alcoholic fermentation at a temperature of around 25 degrees to preserve the terroir. This is followed by malolactic fermentation and aging on fine lees. Vinification and maturation take place in high quality oak barrels.
