Production

Hand-harvested grapes are sorted half in the vineyard and the other half in the cellar.
The grapes undergo direct pressing.
The must ferments in stainless steel tanks and aged on the lees for 14 months.
The secondary fermentation in the bottle is carried out as an Extra Brut.
