This cuvée is made from grapes harvested from a unique plot located in Combai di Miane, map number 1106, with an average age of 90 years.

The extremely fine bubbles create a silky, gentle, enveloping sensation in the mouth.
It has fruity aromas and strong mineral notes, with floral and herbal notes.
The aroma blends with the aroma of bread, creating a vibrant, fresh, and salty taste.

Technical Data

Made entirely by hand in a sustainable manner. The grapes are harvested in buckets, placed in panniers, and carried on shoulders to the harvest point at the top of the field. Pericarp soaking for several hours. The must is placed in tanks and then undergoes alcoholic and malolactic fermentation. Bottled between March and April after several months of storage. In the bottle, rather than malolactic fermentation, secondary alcoholic fermentation begins, allowing the yeast to settle and remain in contact with the wine, giving off fine aromas and increasing complexity. It does not reach the market until October of the following year, and is not disgorged, allowing the yeast to settle to the bottom of the bottle.
