Production

Harvesting is done entirely by hand in a sustainable manner. Grapes are collected in buckets, placed in baskets, and carried on shoulders to the harvesting point at the top of the vineyard. After several hours of skin maceration, the must is transferred to tanks for alcoholic fermentation and malolactic fermentation. After a few months of storage, bottling occurs between March and April. Inside the bottle, a secondary alcoholic fermentation begins instead of malolactic fermentation, with the yeast settling and continuing to interact with the wine, releasing quality aromas and increasing complexity. The wine remains on the market until October of the following year, without disgorgement, allowing the yeast to settle at the bottom of the bottle.

About the Winery

Balan

The Balan company was founded in 1962 by a very young Sergio Balan, who thus put to good use the knowledge gained working with his father Giuseppe and his grandfather Jeremiah: both had various agricultural activities, but were known above all as, we would say today, specialized courtiers in the wine sector. During the First World War, Giuseppe, who left for the front, could not take care of the family business. At that time his wife Rosa Stella played a decisive role in the stability of work and the maintenance of relationships built by her husband.
