Technical Data

Viticulture
Planted in 1982.
A single plot located on the heights of Trois-Puits.
The soil is shallow, with approximately 20 cm of Campanian (late Cretaceous) chalk.

Winemaking
Dosage: 3g/L
2,000 kg of grapes pressed using a horizontal pneumatic press.
Light debourbage is performed, and only 5g/hectoliter of sulfites are added at harvest.
Alcoholic and malolactic fermentations occur naturally (using wild yeasts).
Aged in 350L Chassin barrels (second and third use) and new Taransaud barrels.
No filtration or bâtonnage is performed to preserve the wine's texture.
Disgorging is done manually using pupitres.
