The name of the cuvée, "An elegant wine made from stone", says it all: like all Cornas Syrahs, it has an austere and mineral taste, but also a complex elegance.

Tasting Comments

Tasting Notes
Dark in color. The aroma of blackberry and smoked bacon is blended with complex spice accents. The medium to full-bodied taste has a smooth texture with ripe fruit. The tannins are also moderately rounded.

Pairing
Steak with black pepper sauce, beef or lamb stew, venison, and hard cheeses.

Technical Data

The grapes are destemmed but not crushed. Fermentation takes place in stainless steel vats for 3 weeks. Malolactic fermentation takes place in 500 litre demi-muid oak barrels. Aging takes place in demi-muid barrels (35% new) for 18 months.
