The 33-hectare vineyard is located on the clay-limestone hills surrounding the Thau Basin, benefiting from the sea breezes and the scents of the garrigue. This terroir is rich in colors: the reds and yellows of the clay-limestone soil, the greens of the garrigue, and the blues of the sky and the Thau lagoon. The Mediterranean climate allows the grapes to reach optimal ripeness and fully express their typicity.

Committed to maintaining biodiversity, we plant multi-species hedges along the edges of the parcels and on the banks of the stream that winds through the estate. Bat boxes are placed on sunny facades and along the stream to support the activity of pipistrelle bats, predators of the Eudemis moth.

Anaïs Ricôme emerges as the new reference in Picpoul-de-Pinet, an appellation little known among French enthusiasts. Yet, this is where great white wines of the Languedoc are born, with the old piquepoul grape variety as the star. After studying viticulture and oenology and gaining experience in a New Zealand vineyard, her father, Yves, suggested she take over this vineyard near Marseillan. Anaïs then reduced the vineyard's size to 33 hectares for better quality control and adopted organic farming, with increasingly biodynamic practices. This music-loving thirty-something works with parcel selection for her best cuvées. Above all, she has captured the elegance and unique touch of this grape variety with aging in sandstone, foudre, and stainless steel.
