Winemakers' Note
The idea for this cuvée came to me after several trips to the Basque Country, sipping one of those delicious Txakoli as an aperitif, with my feet in the water. I was eager to make this kind of cuvée. During the 2020 harvest, I was tasting grapes from a plot and had a revelation! Regarding the name, everyone knows Joe Dassin and his song "Go Whistle on the Hill..." In these times, we feel like dancing! It's also the name of a comic by Fab Caro that we love. Open a bottle and don't forget the little bouquet of eglantine...

La Croix Gratiot
The 33-hectare vineyard is located on the clay-limestone hills surrounding the Thau Basin, benefiting from the sea breezes and the scents of the garrigue. This terroir is rich in colors: the reds and yellows of the clay-limestone soil, the greens of the garrigue, and the blues of the sky and the Thau lagoon. The Mediterranean climate allows the grapes to reach optimal ripeness and fully express their typicity.
