Zai Zai Zai Zai 2023 La Croix Gratiot

To preserve the freshness of Picpoul Blanc, the grapes are deliberately harvested at a slightly underripe stage and vinified at low temperatures, resulting in a light sparkling wine when bottled.

Winemaker's Notes

The idea for this cuvée came to me after several visits to the Basque Country, where I enjoyed a delicious Txakoli as an aperitif while dipping my feet in cold water. I wanted to create a cuvée like this. During the 2020 harvest, I was tasting grapes from one of our plots when the inspiration for the name of the cuvée came: it's a reference to the song "Siffler sur la colline" by Joe Dassin. It makes you want to dance. It's also the name of one of our favorite cartoons, Fab Caro. Don't forget to open the bottle with a little bouquet of Eglantine.
