Tasting notes
It has a pale, sparkling color and very delicate bubbles. The aroma is bright and lively, evoking lemon peel, peppermint, and peach.
The taste is characterized by a lively acidity, a salty finish and fine, fine bubbles.
It has a light, slightly effervescent feel that soothes the throat.

Pairing
It's perfect as an aperitif, but be careful, you'll finish it in no time.

Production

Producer's comment
The idea for this cuvée was born from several trips to the Basque Country, where I enjoyed a delicious Txakoli aperitif on a terrace with my toes in the water. I had always wanted to create a wine in that style, and then, tasting grapes from one of our plots during the 2020 harvest, inspiration struck.
The name comes from the famous song by Joe Dassin, "Aller siffler sur la colline."
It expresses the current mood that makes you want to dance.
It also takes inspiration from our beloved Fab Caro comic of the same name.
Don't forget to add a little bouquet of wild roses when you open the bottle.

Winemaking
To maintain freshness, Picpoul Blanc grapes picked slightly early are selected and fermented at low temperatures.
A small amount of CO₂ is added through a membrane filter during bottling.

La Croix Gratiot

The 33-hectare vineyard is located on the clay-limestone hills surrounding the Thau Basin, benefiting from the sea breezes and the scents of the garrigue. This terroir is rich in colors: the reds and yellows of the clay-limestone soil, the greens of the garrigue, and the blues of the sky and the Thau lagoon. The Mediterranean climate allows the grapes to reach optimal ripeness and fully express their typicity.
