Tasting notes
A pale lemon yellow in color with a delicate sheen. The aroma is based on fresh citrus fruits, lime and lemon peel, with exotic nuances reminiscent of passion fruit and white peach. Furthermore, flint and smoky minerals from the granite form a structure that adds complexity. In the mouth, the sharp acidity is impressive from the attack, and the taut structure tightens the entire wine.
The mid-palate is rich in fruit and umami, with a subtle hint of honey from aging. The finish is long, with salty minerals and a pleasant citrus bitterness.

Cultivation
Soil: Granite and clay soil typical of Holder
Age of the tree: Approximately 35 years
Cultivation: Each terroir is treated as an ecosystem, and farming methods are practiced that protect the rich biodiversity.
They protect birds by raising hedges, plant trees, manage grasslands with sheep, and plow with horses.
Harvesting: Hand-picked from each plot, carefully selected and sorted.

Winemaking
The grapes are pressed by bunch, by plot and by variety. The juice is gravity-fed into stainless steel tanks where it is fermented under temperature control. The lees are then aged in stainless steel tanks and wooden barrels (Burgundy and demi-muids).
