This Syrah is grown on a slope of granite and limestone soil, and is carefully brewed using traditional methods. It has a rich aroma of black fruits and spices, supple tannins and a moderate acidity, and is both deep and elegant. It also has high aging potential.

Upon exposure to air, delicate oak aromas emerge. These aromas come from barrel aging and bring out the rich character of the fully ripe grapes to the fullest.
It has a supple mouthfeel and smooth texture, with a perfect balance of tannins, freshness and aroma, making it a pleasant drink.

Pairing
Lightly spiced white meats and game dishes such as venison

Production

Cultivation

Granitic soil.
Grapes grown in high altitude and high slope vineyards located in the communes of Chavanay and Malleval.

Winemaking

The grapes are hand-harvested, sorted directly in the vineyard and then partially destemmed in the cellar.
Alcoholic fermentation takes place in stainless steel tanks and maceration lasts for three weeks.
During this period, punch down to push down the caps and pump over to circulate the juice are performed.
This allows the tannins to be extracted, the aromas to be released and the colour of the cuvée to be determined.
Fermentation is carried out using wild yeasts and malolactic fermentation is carried out in barrels.
It is then aged in barrels for 12 months.
