花崗岩と石灰質が混ざる斜面のシラーを、伝統的な手法で丁寧に醸造しました。ジューシーなチェリーや潰したイチゴ、熟した果実の香りが広がり、空気に触れると繊細な樽香が立ち上ります。口に含むとしなやかな口当たりと滑らかな質感が印象的で、タンニンとフレッシュさ、香りのバランスが見事に調和します。熟成のポテンシャルも十分。ジビエや軽くスパイスを効かせた白身肉と。

Tasting note

Aromas of juicy cherries, crushed strawberries and ripe fruit. Upon exposure to air, delicate oak aromas emerge. These aromas come from barrel aging and bring out the rich character of the fully ripe grapes to the fullest. It has a supple mouthfeel and smooth texture, with a perfect balance of tannins, freshness and aroma, making it a pleasant drink.

Winemaking & technical data

Cultivation

Granitic soil.
Grapes grown in high altitude and upper slope vineyards located in the communes of Chavanay and Malleval.

brewing

The grapes are hand-harvested, sorted directly in the vineyard, and then partially destemmed in the cellar.
Alcoholic fermentation takes place in stainless steel tanks, followed by maceration for three weeks.
During this period, punching down is performed to press down the caps and pumping over is performed to circulate the juice, extracting tannins, releasing aromas, and determining the color of the cuvée.
Fermentation is carried out using wild yeasts and malolactic fermentation is carried out in barrels.
It is then aged in barrels for 12 months.
