After destemming, the juice and pulp are macerated at low temperature and then gently pressed. 15% of the juice is fermented in oak barrels, and the remaining 85% is fermented in stainless steel tanks. It is aged on the lees for 8 months, and then aged in bottle for several more months. Elegant, fruity, and full-bodied, it has a pleasant balance of acidity and saltiness, and a long, lingering finish.
