Production

Harvest is usually in September. The harvested grapes weigh 0.2 kg and are pressed very carefully, producing approximately 0.5 liters of wine per 1 kg.

Vinification takes place at approximately 15°C, and still wine is mixed only from March to April. The wine is bottled and a syrupy mixture of yeast and sugar is added.

The wine is then fermented again, but this time in the bottle for a month and a half.

The carbon dioxide then stays in the bottle, adding delicious bubbles to the wine. The wine is then stored for 12 months before release.

During this time, the bottle is rotated and turned upside down (automatically) so that the sediment collects at the top of the bottle.

The upper part freezes and the precipitate is injected. In this dry version, add the same wine and only a small amount of cane sugar.

Brut always has a residual sugar content of 0-15g per litre. Manos Brut has 6g of residual sugar per liter, which puts it in the dry category.
