This wine allows you to fully enjoy the charm of natural wines cultivated in the soil of Roussillon, southern France. Produced by a skilled producer using biodynamic farming methods, this white wine is characterized by a pure flavor that honestly reflects the unique characteristics of the vineyard.

When poured into a glass, the aroma of honey, white flowers, and almonds gently rises, and the fullness and minerality of the aging blend beautifully. The mouthfeel is smooth and creamy, while the fruit's supple acidity tightens the whole, resulting in a long, elegant finish.

This rare wine combines the warmth of the southern French sun with the clarity of its limestone soil, making it a great choice for both natural wine enthusiasts and wine lovers seeking a high-quality, mature white wine. It complements a wide range of dishes, from seafood to cream sauces, and will add a touch of color to any table.

Tasting Notes
When poured into a glass, it has a deep lemon yellow colour with a golden hue.

The aroma features nuances of ripe pear, white peach, acacia flowers, and honey, with almond, hazelnut, and a slightly salty mineral aroma adding depth.

The mouthfeel is soft, and the roundness and umami that come from aging spreads, while the fresh acidity brings the whole thing together beautifully.

Nuances of vanilla and toast from the barrels blend quietly, and the aftertaste is long, with a subtle spice and minerality.

It has a refined taste that combines the purity of natural wine with the complexity of aged white wine.

Pairing
Sautéed scallops with butter and white wine sauce
Roast chicken with thyme and lemon
Assortment of white cheese (Camembert and Brie) and walnuts
