蜂蜜と塩気が寄り添う、熟成の白。

ビオディナミで畑を耕す造り手が、グルナッシュ・グリとマカブを軸に仕立てた白。黄金がかった深いレモンイエローの色調から、熟した洋梨や白桃、アカシアの花、蜂蜜の香りが立ちのぼり、アーモンドやヘーゼルナッツ、塩味を感じさせるミネラルが奥行きを添えます。熟成由来の丸みと旨味を瑞々しい酸がまとめ、余韻にはスパイスとミネラルが長く残ります。帆立貝のソテーやローストチキンと。

Tasting note

When poured into a glass, it has a deep lemon yellow colour with a golden hue. The aroma features nuances of ripe pear, white peach, acacia flowers, and honey, with almond, hazelnut, and a slightly salty mineral aroma adding depth. The mouthfeel is soft, and the roundness and umami that come from aging spreads, while the fresh acidity brings the whole thing together beautifully. Nuances of vanilla and toast from the barrels blend quietly, and the aftertaste is long, with a subtle spice and minerality. It has a refined taste that combines the purity of natural wine with the complexity of aged white wine.

Winemaking & technical data

Age of trees and plot: The vines are from plots planted between 1919 and 2008.

Soil and mountain conditions: Mainly very old schist bedrock, with light sandy or very shallow soil layers and structures derived from old schist.

Cultivation/brewing policy: Organic farming and biodynamic practices, with a natural orientation and minimal intervention wherever possible.

Yield estimate: The limited information available indicates a very low yield of 15 hL/ha (average).

Brewing and aging: Hand-picked (harvested in 20 kg cases, etc.), fermented with native yeast, some in barrels (228L/500L), foudres (large barrels), and cement tanks.
