自社圃場で種まきから収穫まで無農薬で育てた大麦のモルトを100%使用。モルトの個性と香りを保つため、ジェローム・ファイリーの上質なフレンチオーク樽とブルゴーニュ産のワイン樽で12か月熟成させています。自然なオレンジゴールドの色調に、チョコレート、紅茶、フルーツ、干し草のアロマ。口に含むとチョコレートとキャラメル、ごく軽い甘さが広がります。濾過も着色もしていません。

Tasting note

Natural orange-gold tone. Due to the concentration of the fragrance, there may be some cloudiness inside the bottle. The alcohol is unfiltered and uncolored to preserve flavor and aroma.

Food pairing

Serve straight or diluted with plain or chilled water in the late afternoon or with dessert...your choice.

Winemaking & technical data

Distillation took place from August to October 2020. The barley is carefully stored to preserve its malt character and aroma.

Aging takes place for 6 months in Saint-Aubin Blanc 1er cru casks, 12 months in Burgundy Grand Cru casks, and in two fine-grained French oak casks owned by the Filey cooperative. White wine barrels intensify floral aromas, retain lees and add freshness. Red wine barrels add spice, diffuse aromas, and retain malt aromas.

About this bottle

This whisky is made from 100% malted barley grown without pesticides, from sowing to harvest, in our own fields. To preserve the malt's character and aroma, it is aged for 12 months in Jerome Faily's fine French oak barrels and premium Burgundy wine barrels. Its natural amber and orange color is evident in its aromas of chocolate, black tea, fruit, and hay. On the palate, it offers appealing chocolate, caramel, and a very light sweetness.

Because these are beverages, we are generally unable to accept returns or exchanges for reasons of personal preference. Please order with care.

Even with chilled delivery, a rapid change in temperature can cause slight seepage. This does not affect the quality of the wine, and we are unable to offer an exchange or refund in such cases. Every bottle is visually checked before packing.

Where the fault is ours, returns and exchanges are accepted within 7 days of delivery.
We are unable to help after that period, so thank you for your understanding.

Return postage

Where the fault is ours — a faulty bottle or the wrong item — we cover the cost of return. Returns and exchanges for reasons of personal preference are not accepted.

Faulty items

If anything arrives faulty, we will replace it with a new bottle or an equivalent, subject to availability.

About the producer

Soligny

[Spirits inspired by Burgundy and Champagne]

Sorini Distillery was founded in 2020 by Véronique and Vincent Godier, a couple whose roots lie in cereal farming for generations. They trained as agricultural engineers and winegrowers in Burgundy before becoming distillers in Champagne.

The barley is selected to ensure the highest possible quality and that all the grains are the same size.

The distillery is equipped with a 2,000L ice still (a square still made in the Netherlands), and brewing, fermentation and distillation are carried out continuously in the same production facility.

First distilled in September 2020, it is aged exclusively in new French oak barrels or casks from Burgundy, both white and red wine.

Vincent's many years of experience in the wine industry, studying woodworking, gave him an understanding of how to communicate his wishes to the coopers and ensure they understood them. Véronique and Vincent didn't want to extract the tannins from the wood, so they came across Jérôme Fauret, a small cooperage near Nuits-Saint-Georges.

Here, 70% new barrels are used, and 30% well-ventilated barrels that are aged 3 to 5 years.

Inspired by the great wines of Burgundy and Champagne, the company's philosophy is to produce terroir-driven eaux-de-vie, inspired by the diversity and precision of each plot, and is reinforced by a spirit of "close to people and close to nature."

All agricultural, technical and strategic processes are carried out to embody the spirit we aspire to.
