malt
Malting is done locally using grain-sensitive methods.
We select barley with the right protein content and good specific gravity, and use a gentle malting method to preserve the aroma of the raw barley as much as possible.

fermentation
From mashing to fermentation, manipulation is kept minimal and controlled to protect the quality of the malt.
Fermentation takes place over a period of 5 days under temperature control.
After the initial stage, which is dominated by alcohol production, the yeast is placed in an acidic, oxygen-free environment, which encourages the production of complex molecules with intense aromatic power, leading to a richer development of aromas.

distillation
We use IStill stills, which consume less water and energy, for slow and precise distillation.

Using our unique manufacturing process, the grain husks are left on from brewing to distillation, and the process is carried out without filtration.

The cube-shaped stainless steel tank, equipped with a powerful stirring device and six heating resistors, allows the distillation mixture to be heated for more than 20 hours without burning.

The hybrid distillation column is equipped with a temperature sensor and valves, allowing for the production of a distillate with an alcohol content close to approximately 65% ​​vol.
The day after production, the whiskey is bottled directly into barrels without adding any initial water (to adjust the alcohol content).

AgingAs the distillate ages in wooden barrels, its components slowly change through contact with oxygen, gradually extracting the aromatic components from the barrel.

The new barrels are made by the barrelry of Jérôme Houailly, a cooper who holds the title of "Meilleur Craftsman of France (MOF)", and are selected based on the philosophy of making the most of the wood, rather than discarding difficult-to-handle wood.

The Burgundy wine barrels come from Véronique and Vincent's own vineyards in Nuits-Saint-Georges or from friendly producers in the Côte de Nuits. Selecting a single barrel is a more complex task than selecting an assemblage (blend).

At any given time, you must compare several whiskies, envisioning their current state and future maturation, and combine the precision of a single cask with the subtlety of Burgundy's great wines while respecting the individuality of the distillate.
