Made from 100% barley malt grown pesticide-free from sowing to harvesting on the company's own plots. Aged for 12 months in fine Jerome Firy French oak barrels and fine Burgundy wine barrels to preserve the malt's character and aroma. Natural amber and orange colour. Aromas of chocolate, tea, fruit and hay on the nose. On the palate, chocolate, caramel and very light sweetness are attractive.
Owning & Enjoying

Tasting notes
A natural orange-gold color. Due to the concentrated fragrance, there may be some slight cloudiness in the bottle. To preserve the flavor and aroma, the alcohol is neither filtered nor colored.

Pairing
Serve straight or diluted with chilled water in the late afternoon or with dessert...your choice.

Production

Distillation took place from August to October 2020. To preserve the malt’s character and aroma, the barley was carefully stored.

Aging was conducted for 6 months in a Saint-Aubin Blanc Premier Cru barrel and 12 months in a Burgundy Grand Cru barrel, as well as in two fine French oak barrels owned by the Faivre cooperative. The white wine barrel enhances floral aromas, retains sediment, and adds freshness. The red wine barrel adds spice, disperses the fragrance, and helps retain the malt’s aroma.

About the Winery

Soligny

Soligny

The Soligny Distillery was founded in 2020 by Véronique and Vincent Godier, whose family has been involved in cereal farming for several generations. Trained agronomist engineers and winemakers in Burgundy, the couple turned to distillation in Champagne.
