Production

Made with 100% malt from organically grown barley (Laurie Light) cultivated from sowing to harvest on our own estate. Harvested on July 22, 2021. Distillation took place from summer to fall of 2022.

To preserve the malt's character and aroma, it was aged for 12 months in high-quality French oak barrels by Jérôme Faivre and premium Burgundy wine barrels.

About the Winery

Soligny

Soligny

The Soligny Distillery was founded in 2020 by Véronique and Vincent Godier, whose family has been involved in cereal farming for several generations. Trained agronomist engineers and winemakers in Burgundy, the couple turned to distillation in Champagne.
