Production

After a strict selection of grape bunches, 30% are destemmed without crushing and transferred to the base of a 2,500L stainless steel tank. The remaining whole bunches are also moved to the tank. Fermentation begins naturally after a low-temperature maceration lasting 34 days. The maceration is very gentle, intended to soak the bunches together with the must. After fermentation, the wine is gently pressed using a vertical basket press. Malolactic fermentation and aging take place for 14 months in new French oak 500L barrels and in 1,000L clay jars.
