穏やかな醸しが引き出す、ガルナッチャの素顔。

シエラ・デ・グレドスのガルナッチャ100%。厳格な選別の後、房の30%は破砕せずに除梗し、残りは全房のままステンレスタンクへ移します。低温で3〜4日のマセラシオンを経て自然に発酵が始まり、房を優しく浸すことを意図した穏やかな醸しが特徴です。発酵後は垂直のバスケットプレスで丁寧に圧搾。赤い果実と熟した果実に、スパイスと野生の草のニュアンスが寄り添います。

Winemaking & technical data

After rigorous bunch selection, 30% of the bunches are destemmed without crushing and transferred to the base of 2,500L stainless steel tanks. The remaining whole bunches are transferred to tanks. Fermentation begins naturally after 34 days of maceration at low temperature. Maceration is very gentle, intended to soak the bunches together with the must. After fermentation, the wine is gently pressed in a vertical basket press. Malolactic fermentation and aging take place for 14 months in new French oak barrels of 500L and earthen barrels of 1,000L.
