This wine is made primarily from Grenache, with a perfect balance of moderate acidity and excellent tannins. It is very fruity and is modeled after Chateau Rayas in Chateauneuf-du-Pape.

Tasting Comments

Tasting Notes
The aroma is of black fruit, cherry and blueberry. The mouthfeel is rich and stimulating, with the typical ripe dark fruit flavors of Grenache and smooth tannins. The aftertaste is spicy and long-lasting.

Pairing
Red meats duck with a spicy sauce pork tenderloin with prunes.

Technical Data

The Grenache grapes are partially burned and the other varieties are fully burned to separate them. Fermentation is carried out in concrete tanks for 6 weeks, with punching and daily pumping of the juice from the top. Aging is continued for 12 months in 3-5 year old oak barrels, followed by 6 months in concrete tanks.
