The clay-limestone soil creates an exquisite balance of fruitiness and minerality. Fermentation at low temperatures brings out the freshness, spreading the gorgeous citrus aroma and pleasant acidity. It combines lightness and depth, making it perfect for seafood and white meat. The elegant aftertaste is appealing.

Technical Data

The grapes are hand-harvested into small containers and pressed in an oxygen-free environment using inert gas to preserve the aromatic potential of the grapes.
It is then fermented in French oak (50% new barrels) and clarified at low temperature.

Aging: 10 months in barrels (50% new) on the lees.
