This cuvée is perfect for ageing, and shows another side of Sancerre Blanc that only emerges after several years of aging. This cuvée was made from grapes planted on the clay-limestone plateau of the village of Sancerre in 1968, and fermented and partially aged in wooden barrels, resulting in a powerful yet elegant white wine that is ideal for accompany a gourmet meal.

Tasting Comments

Tasting Notes
When poured into a glass, the pale gold color shines and a depth that suggests a hint of aging emerges.
The aroma is of ripe yellow peach, white flowers, pear, and a delicate minerality derived from the Cayot soil.
Over time, notes of anise, honey and a slight smoky note emerge, adding depth to the finish.
On the palate, the wine is impressively well-structured and full-bodied, with a concentrated and complex flavor that comes from the 55-year-old vines.
The smooth acidity tightens the wine, and the minerality from the limestone terroir continues beautifully to the aftertaste.
The aftertaste is long, with citrus peel and flint-like flavors remaining pleasantly on the tongue.
It gives the impression of having the potential to expand even further with age.

The ancient vines in the plot known as En grands champs are planted on a clay-limestone plateau (280m above sea level) in the village of Sancerre.

Cultivation method

Guyot-Poussard method of pruning: complete bud removal, natural grass cultivation (allowing undergrowth to grow)
Hand harvested and biodynamically sprayed

Whole bunch direct pressing, juice stabilised at low temperature, lightly filtered
Aged 12 months, 50% in stainless steel tanks and 50% in demi-muids (600L barrels)
Then it is aged for 18 months in tanks and bottles.
