The grapes are hand-sorted on a sorting table. After destemming, they are sent to a press where they are gently pressed. The wine is clarified at low temperature and fermented at a temperature of 15-16°C in 50hL oak barrels. It is then aged on fine lees for approximately five months. The aromas of exotic fruits, such as grapefruit and white peach, are the hallmark of this wine, with a fresh taste that is reminiscent of minerals and a subtle sweetness.

The grapes are hand-picked in small wooden boxes and then quickly transported to the winery, where they are hand-sorted on a conveyor belt. After destemming and slight crushing, the grapes are gently pressed with a vertical press. The must is kept cool and fermented at 15-16°C in 50hL wooden barrels. It is then aged with the lees for 5 months.
