A profound white, rich in nutty and savory notes, born from traditional Jura winemaking methods.

A white wine in the traditional Jura style, where the expansive fruitiness of Chardonnay is infused with the spice and umami notes derived from Savagnin. Aging in barrels for 24 months under voile, without topping up, allows for a complex aroma reminiscent of walnuts, hazelnuts, citrus peel, and white flowers to develop. The wine's deep flavor, accompanied by fresh acidity and salinity, pairs exceptionally well with cheese dishes, seafood, and cream-based cuisine.

A beautifully clear color with a pale yellow hue and a golden shimmer.
The color intensity is modest, with a flowing transparency.
The first impression is a complex and aromatic fragrance reminiscent of white-fleshed fruits, citrus, spices, flowers, and a hint of saltiness.
As it breathes, notes of green apple, lemon juice, and its zest become more pronounced.
Further layers of curry and grey pepper spice, a bouquet of white flowers, walnut,
hazelnut, almond, and a subtle saltiness emerge.
The attack is fresh, maintaining a crispness on the palate while gradually evolving into a rounder texture.
The aromas perceived on the nose unfold in the mouth, revealing a rich umami flavor.
The finish is fresh, with a subtle roundness and a pleasant bitterness.

Cultivation
Soil: Clay and blue/gray marl soil

Winemaking
After fermentation in stainless steel tanks, the wine is aged for 24 months in oak barrels without topping up (under flor yeast = sous voile aging).
Chardonnay and Savagnin are blended at the end of the aging process.
