Pale yellow with a greenish sheen, the aroma of yellow peach and spice spreads quickly. It is characterized by a strong minerality and limestone terroir, and you can enjoy a long-lasting aftertaste.

Tasting notes
The colour is pale yellow with a greenish sheen.
The nose opens very quickly, revealing fruity notes such as yellow peach and spicy notes.
It is powerful and stable, with distinctive mineral and iodine expressions.
On the palate, it exudes power and minerality from its original limestone terroir, with a long, persistent finish.

Pairing
Grilled white fish, sautéed shrimp and asparagus, seafood risotto

Production

Harvesting will be done by hand on September 19, 2023, followed by direct pressing.
The wine is vinified in 600 liter demi-muids, without any extraction.
All are aged for 8 months in demi-muids used 2-3 times.
It is then transferred to a stainless steel tank where clarification takes place through natural settling.
Further stabilization and clarification using bentonite are performed, followed by filtration through very fine filters.
It will be bottled on May 13, 2024, with 1,540 bottles produced.

Maison de la Chapelle

Delphine and Grégory Viennois, two native Burgundians, are returning to their roots with the creation of their wine merchant La Maison de la Chapelle. These two wine enthusiasts embarked on their adventure with their very first vintage in 2014. Delphine, who comes from a winemaking family, has always been associated with the great Burgundy houses. As for Grégory, an oenologist, he trained with some of the great names in Burgundy, including Domaine J. Prieur, de l'Arlot, Smtih-Haut Lafitte, M. Chapoutier, Ferraton Père & Fils and Stéphane Derenoncourt. Now back in Burgundy, running his own business, he is also technical director at Domaine Laroche in Chablis and consultant at Quinta Do Monte d'Oiro in Portugal.
