A "serious" rosé born from 60-year-old vines

80% Grenache and 20% Cinsault grown organically (uncertified) in the limestone soils of Gard, Southern France. The vines are up to 60 years old, an unusually luxurious age for a rosé. Hand-picked grapes are meticulously crafted using the direct press method, protected from oxidation with dry ice. This is a serious rosé for the table, with fresh fruit flavors layered with the umami and depth characteristic of old vines. It pairs well with cured ham, seafood, and even Japanese cuisine.

Tasting Notes
Appearance
Pale salmon pink. The color is delicate and elegant, derived from direct press, with a brilliance that evokes a refined, Provence-style aesthetic.

Nose
Charming aromas of small red fruits—wild strawberries, redcurrants—white peach, and melon rind. Swirling the glass reveals subtle spice notes from Grenache, nuances of Southern French dry herbs like thyme reminiscent of garrigue, and a mineral impression reflecting the limestone soil. The clean and pure aroma suggests careful winemaking with dry ice for antioxidant protection and temperature control.

Palate
The attack is fresh, with juicy acidity running through the entire wine. Despite its pale color, the mid-palate has a surprising depth and umami of fruit, a concentration characteristic of old vines, specifically 60-year-old Grenache and 40-year-old Cinsault. The suppleness and light drinkability contributed by Cinsault are complemented by a moderate volume of 13.5% ABV. The finish offers a pleasant lingering taste of saline minerality and a slight bitterness from red fruits. This is a gastronomic rosé that truly shines when paired with food, not just as an aperitif.

Pairing
Prosciutto and melon
Shrimp and herb ajillo
Salt-grilled salmon
