Tasting Notes
It has a deep ruby color and a delicate yet powerful aroma.
The aroma of red and black fruits, reminiscent of black cherry and raspberry, is layered with subtle nuances of violet and spice. On the palate, smooth and supple tannins support the structure, while the rich fruit and balanced acidity lead to a long finish. The toasty aroma from the oak adds complexity, resulting in a finish that exudes the elegance and depth of a mature Pinot Noir.

Cultivation

Terroir: The soil is brown clay, mixed with silty clay, with a medium amount of gravel, and is very calcareous marl. The vineyard is located on a south-facing slope.
Average age of vines: 46 years

brewing

The grapes are hand-picked and sorted entirely by hand. After pre-fermentation maceration (cold soaking), the wine is aged for 15 to 20 days. Periodic punching and remontage are performed.
This process (liquid circulation) extracts the rich compounds and aromas that will shape the future wine.
Aging: 12 months in 100% oak barrels, 30% of which are new.
