Tasting notes
A wine with a radiant, beautiful yellow hue. It features rich aromas of dried apricot, honey, and white peach, with smoky and spicy accents. On the palate, you’ll experience rich flavors of dried apricot and candied fruits, with a hint of citrus flavor amidst the fullness. The addition of spicy touches and a quality mineral sensation results in a well-balanced and fresh taste.

Pairing
Raw fish, smoked fish, white meat in sauce, cheese tarts, goat cheese.

Production

Harvesting is done by hand from September 10th to 25th (from October 1st to 15th before the year 2000).

Fermentation is carried out with wild yeasts. The wine is made without added sulfur dioxide, with a small amount added at bottling if necessary.

It is aged for one year, with 80% in tanks and 20% in barrels and demi-muids, aged separately by plot. Bottling is done in-house according to the biodynamic calendar.

About the Winery

Domaine Denis & Didier Berthollier

In 1850, Louis Tissot established an agricultural farm in Chignin with very few vines, which were cultivated for the family's personal consumption. After the Phylloxera crisis in 1900, a few vine plants were replanted, and they are still cultivated today. In 1950, Victor Berthollier (paternal grandfather of Didier and Denis) was among the very first to commercially bottle their wine; at that time, it was more common to sell wine in barrels and bulk.
