This cuvée is a blend of four plots from four different terroirs spread across three communes in the "Chignan-Bergeron" appellation, and is only produced in exceptional years.

Tasting Comments

Tasting Notes
A beautiful, bright yellow color, it offers a rich aroma of dried apricots, honey and white peach with smoky and spicy accents.
When you put it in your mouth, you can taste the rich flavors of dried apricots and candied fruit, with a hint of citrus in the full-bodied taste.
A touch of spice and a good minerality give it a balanced and fresh taste.

Pairing
Raw fish, smoked fish, white meat in sauce, cheese tarts, goat cheese.

Technical Data

All grapes are harvested by hand from September 10th to 25th (October 1st to 15th before 2000).

Fermented with wild yeast.
Brewed without the addition of sulfites, with a small amount of sulfites added at bottling if necessary.

Aging takes place for one year, 80% in tanks and 20% in barrels and half-barrels, each section being aged separately. Bottling is done in-house and follows a biodynamic calendar.
