Beginning with a 30-year-aged Champagne and concluding with a 33-year-aged Grand Cru. An end-of-year evening tracing the passage of time in Burgundy.

We are hosting an exclusive wine dinner for just 7 guests at est, the French restaurant located on the 39th floor of Four Seasons Hotel Tokyo at Otemachi.

We will serve a total of seven wines: one Champagne and six Burgundies.
With vintages ranging from 1993 to 2021, you will trace roughly 30 years of history, one plate at a time.


The Flow of the Evening

The Whites: A Comparative Tasting of Côte de Beaune Premier Crus

From the minerality of Chablis to the elegance of Puligny-Montrachet and the power of Meursault-Perrières.
Experience how the same Chardonnay grape expresses its terroir in such distinct ways.

The Reds: From Youth to the Peak of Maturation

From Volnay in the Côte de Beaune to the Grands Crus of the Côte de Nuits.
2018 → 2013 → 1993 — each glass reveals a deeper level of maturity.

The final glass will be a Grands-Échezeaux 1993, aged for 33 years.
A bottle hand-selected for this evening to bring our journey to a close.


Seven Wines Selected for This Special Night

Duval-Leroy|Femme de Champagne Grand Cru 1996

The flagship cuvée from Duval-Leroy. With 30 years of aging, it is the perfect wine to begin our evening.

Domaine Vincent Dauvissat|Chablis 1er Cru Séchet 2021

A Premier Cru from one of Chablis's premier producers. Its clear acidity and minerality mark the beginning of our journey through the whites.

Domaine Étienne Sauzet|Puligny-Montrachet 1er Cru Les Combettes 2019

From Domaine Étienne Sauzet, a leader in Puligny. Les Combettes is a Premier Cru bordering Meursault; it sits right next to the Meursault-Perrières we will taste next. Enjoy a Chardonnay defined by its richness and elegance.

Domaine Albert Grivault|Meursault 1er Cru Perrières 2019

Perrières is among the most highly regarded of Meursault's Premier Crus. Offering both depth and tension, it provides the perfect conclusion to our white wine flight.

Domaine Marquis d'Angerville|Volnay 1er Cru Taillepieds 2018

A Premier Cru from a legendary Volnay domaine. We begin our red flight with elegance.

Dominique Laurent|Charmes-Chambertin Grand Cru 2013

A Grand Cru from Gevrey-Chambertin. After 13 years of aging, the fruit and tertiary notes have begun to harmonize beautifully.

Dominique Laurent|Grands-Échezeaux Grand Cru 1993

And, the highlight of the evening.
Grands-Échezeaux after 33 years. A bottle that has rested quietly in the cellar, available only for this night.

est: On the 39th Floor Overlooking the Imperial Palace

The venue is est, the French restaurant on the 39th floor, the top floor of Four Seasons Hotel Tokyo at Otemachi.
You will enjoy a special pairing course tailored to these seven wines, accompanied by the Tokyo nightscape outside the windows.

During the dinner, Cépages sommelier Kensuke Akimoto (JSA Certified Sommelier) will share insights into the background and peak maturity of each wine.

Mature Burgundy is a fleeting encounter, unique to every bottle.
Sharing the conversation about how each glass evolves with those at your table is an essential part of the experience.
