The domaine was founded in 2002 with 8 hectares of vines in the Latour-de-France appellation. Today it holds 13 hectares within Côtes du Roussillon Villages Latour-de-France.
Terroir
Close to Perpignan, on dry, stony soils.
The vines
Carignan, Grenache, Syrah, Macabeu and Grenache Gris. Forty per cent of the vines are thirty years old, and some are fifty or even seventy.
In the cellar
From the day the domaine was founded, chemicals have been banished from both vineyard and winery, and the wines are made by letting nature do the work. The fruit comes in so fresh and so fine that Jean-Louis need barely intervene at all. Sulphites are added in the smallest of doses, and sometimes not at all. The wines are never filtered. Made this way, they draw out the potential the grapes already hold and speak of what they are.

After graduating from a specialist viticultural college, he learned winemaking from Gérard Gauby. "I revere the earth," he is fond of saying, "and I live by what it gives me."
His goal is honest wine: wine that respects both the vintage and the terroir.
