This 100% Garnacha red wine comes from vineyards located at an altitude of 800-900m in the Sierra de Gredos, Madrid, Spain. The grapes are harvested from old vines and cultivated using biodynamic farming methods, in harmony with nature. The wine offers a rich aroma of red fruits, wild herbs, and dried flowers, and a juicy, fresh taste that spreads across the palate. In recent years, Garnacha wines from the Sierra de Gredos have undergone a major resurgence and are attracting international attention.

This movement involves the renovation and revitalization of abandoned old trees.

This wine, produced in this region on the Madrid side, expresses the individuality of the variety well, with powerful aromas of mountain and wild fruit, flowers and balsamic nuances, and a wonderful freshness and complexity on the palate.

Technical Data

Cultivation

The grapes are harvested from 20 hectares of vineyards spread across several plots in Cadalso de los Vidrios and San Martín de Valdeiglesias.

The vines are 60 to 100 years old and grow on poor, sandy soil derived from granite at an altitude of 800 to 900 meters. They are cultivated in a very environmentally friendly manner, based on organic and biodynamic principles, and horses are used in the fields.

brewing

The grapes are not crushed but used whole bunches, with 50% of the grapes fermented whole.

Cold maceration (12°C) before fermentation is carried out for four days to extract the aromas.

Fermentation takes place at 22°C in stainless steel and concrete tanks, using natural yeasts to bring out the grapes' natural character. Malolactic fermentation takes place naturally in 500L French oak barrels, and the final aging takes place in 500L French oak barrels for 9 months (barrels used 1 to 6 times).
